Fresh brisket, trimmed, 5-6 pounds
Celery salt
Garlic salt
Onion Salt
Lemon Pepper
3 oz. Liquid Smoke
1/2 c. Worcestershire sauce
Salt
Pepper
Barbecue Sauce

Directions:
Directions:
Generously sprinkle brisket with celery salt, garlic salt, onion salt and lemon pepper. Center in a heavy piece of foil in large baking pan and sprinkle with Liquid Smoke. Seal foil and refrigerate overnight.
Six and a half hours before serving, open packet, season with salt, pepper and Worcestershire sauce. Reseal, and bake at 300 for 5 hours.
Uncover and pour barbecue sauce over brisket to cover. Cook 1 additional hour at 300, uncovered.
Remove from oven and let rest for 30 minutes before slicing. Serve with remaining sauce.
