1 loaf raisin bread (with or without cinnamon)
1 apple, cut into small chunks
¼ to ½ c heated water
3 veggie sausages, cut into small pieces
3-4 stalks of celery, chopped
1 large onion, chopped
1 egg, beaten

Directions:
Directions:
Preheat oven to 350º. Place loaf of bread on large baking sheet by slice. While the oven is preheating put in oven for around 15 minutes, flipping the slices once. Timing will depend on how long you have it in during preheat. You want to dry it but not make it crispy like toast.
Break slightly toasted bread into small chunks and place in large bowl. Add the heated water, stir about. Add apple chunks. Add sage. Add beaten egg. Set aside.

Saute celery and onion in olive oil for about 5 minutes. Add veggie sausage and continue to saute an additional 5 minutes. Add to bread mix. Mix everything well, using your clean hands.

Place mixture into casserole dish. Cover. Bake in preheated oven for 35-40 minute, uncovering for the last 5-10 minutes.

Casey shared her family Sausage stuffing recipe. I made it vegetarian. The raisin bread was what drew me to the recipe.

It's awesome as a stand-alone garnished by homemade cranberry sauce.

Microwaves well as a leftover.
