1 ½ cups (8 ounce package) chopped dates
1 ½ orange juice
2 cups flour
1 ½ cups brown sugar
1 cup coconut
1 cup chopped walnuts
1 ½ cups rolled oats
¾ cup butter, softened

Preheat oven to 350 º
Bake 45 minutes, until evenly brown

Simmer dates and orange juice 30 minutes, or until thick, in a medium saucepan. Set aside mixture until slightly cooled. Combine flour, brown sugar, coconut, walnuts, oats, and butter until well mixed. Spray a 13 in by 9 in glass pan with vegetable oil. Press half the flour mixture into the pan evenly. Spread the date mixture evenly. Press the rest of the flour mixture over the date layer with your fingers. Try to make the layer smooth.


Cut cooled mixture with a serated knife into 3 inch squares.

In order to supplement our family's income I baked and sold many dessert items for several years in the 1980s to the Wunsche Bros. Café in Old Spring, TX. The date bars were a customer favorite. Unfortunately, older son Jeff was a negative influence on his little brother--against both coconut and nuts. These antipathies are vicious and foolish prejudices against two Southern desert standard ingredients! I hope future generations will come back to their heritage and their senses.
