1/2 lb. smoked sausage links, sliced
1 1/2 c self-rising corn meal
1 can cream-style corn
8 oz. sour cream
2/3 c vegetable oil
2 large eggs
3-4 green onions, chopped fine
1 1/2 grated Monterey Jack cheese with jalapeño peppers

Oven 450º
Brown sausage in medium skillet over medium heat; drain well and set aside. Combine cornmeal and next five ingredients in large bowl; stir well. Pour half of batter into a greased 10-inch cast-iron skillet. Arrange sausage slices on top of batter; sprinkle with 3/4 c cheese. Spread remaining half of batter over cheese. Bake at 450º for 25 minutes; sprinkle with remaining 3/4 c cheese. Bake an additional 5 minutes or until cheese melts
