7-8 medium summer squash, sliced
1 onion, chopped
1/2 stick butter + 1/2 stick butter (divided)
salt and pepper
2 long sleeves Ritz crackers, crushed
2 cups grated cheddar cheese
3 eggs, slightly beaten

Directions:
Directions:
1. Cook squash, onions and salt and pepper slowly in 1/2 stick butter in a covered saucepan until tender (about 20-25 minutes).
2. Remove from heat and add 1 sleeve of crushed Ritz crackers, cheese, and eggs.
3. Mix well. Pour into greased casserole.
4. Combine remaining melted butter and sleeve of Ritz crackers. Sprinkle across the top of the casserole.
5. Bake at 350F for about 45-50 minutes.

This can be made a day or two ahead. Don't sprinkle topping over the casserole. Place topping in a zip lock bag. Top casserole with foil and tape the topping onto the foil. When ready to cook, remove foil and sprinkle topping over the casserole before baking.
