French Onion Soup Recipe

6-7 large sweet onions, peeled and sliced about 1/2 inch think
1 T. olive oil
1 T. butter
salt and pepper to taste
1/4 tsp. red pepper
2 T. chicken or beef better than bouillon
8 cups water (may use 7 cups water and 1 cup red wine)
8 Gruyere cheese slices (can sub Mozzarella or swiss)
2 cups garlic seasoned croutons

Directions:
Directions:
1. Slowly cook onions in oil and butter, allowing onions to soften and begin to caramelize (this takes about 25-30 minutes).
2. Add water and bouilon, salt, pepper and red pepper.
3. Cover pot and simmer slowly another 20-25 minutes.
4, Pour into 8 oven-proof bowls.
5. Place 1/8th of the croutons over the soup and cover with the cheese slice.
6. Place in oven under the broiler until cheese is bubbly and beginning to brown.

Some people place the cheese over the soup and then top with the croutons. Either way is good.
