1 lb. medium-large shrimp
1 onion, chopped
1 T. minced garlic
4 T butter
2-3 cups heavy cream
2-3 T. curry powder
red pepper to taste
salt to taste
3-4 cups hot rice

CONDIMENTS:
peanuts, coarsely chopped
green onions, sliced
flaked coconut
chutney

Directions:
Directions:
1. Saute onions and garlic in butter until translucent.
2. Add heavy cream and simmer until reduced to about half.
3. Add curry powder, red pepper, and salt. Taste and adjust seasonings.
4. Add shrimp and simmer until shrimp turns pink.
5. Serve over rice and allow guests to garnish with condiments as desired.
