2 Cups dry Navy Beans
3 qt. water
1 Meaty ham bone
1/2 Cup cooked mashed potatoes
3 onions chopped
4 -5 stalks celery
1-2 cloves garlic (minced)
1/4 cup parsley
salt & papper to taste

Directions:
Directions:

Soak beans overnight in water enough to cover beans
Add ham bone ….cover and simmer 1 hour (or until beans begin to tender)
Add mash potatoes and mix in until smooth.
add onions, celery and parsley and simmer 1 hour longer ( til beans are soft)

Remove ham bone, dice the meat and return it to the soup.
Soup will be thick, if necessary thin with hot water to desired consistency.

serve with thick slices of crusty bread and butter.

yields 10 to 12 servings
