1 1/2 cup sugar
1 20oz can drained crushed pineapple
12 eggs
2 1/2 - 3 cups cooked rice
2# Ricotta cheese
1 pt. heavy cream
3 tsp vanilla

Directions:
Directions:
Beat eggs. In a large bowl, add all ingredients to beaten eggs. Mix well. Pour into greased 13 x 9" pan. Bake at 350 for 1 hr - 1 hr 15 mins.

Mom Notes:
If using metal pan, cut time down.
Do not use instant rice.
Soak rice overnight in milk.
Do not use more than 3 cups rice or it will come out too dry.
