4 boneless, skinless chicken breasts
8 slices bacon
4 T. cream cheese
½ c. shredded Monterey jack or cheddar cheese
2 diced jalapenos (I use pre-diced jalapenos in a jar.)
chili powder
garlic salt
black pepper
toothpicks

Preheat oven to 350º
Grease baking dish.
Cut a pouch in side of each chicken breast lengthwise, being careful not to poke through.
Mix cream cheese and shredded cheese evenly.
Spread ¼ of cheese mixture in each pouch.
Add 1 tsp.-1 T. of diced jalapenos to each pouch depending on your spice preference.
Sprinkle garlic salt, chili powder and pepper on top of chicken to taste.
Cook bacon in microwave, 4 slices at a time for 2 min.
While bacon is still soft, wrap 2 pieces around each piece of chicken.
Secure each bacon piece with a toothpick near the pouch opening to keep chicken together.
Bake in oven for 30 min.
