Ingredients: For crust 3 cups nabisco chocolate wafer crumbs 1 stick unsalted butter I use more because I like the crust and want more.
Filling 1pound semi sweet chocolate 2 eggs 4 egg yolks
2 cups whipping cream 6 Tbsp powdered sugar (I do it to my taste) 4 egg whites, room temperature

Directions:For crust Combine crumbs and butter and press onto bottom and sides of a 10 inch springform pan. Refrigerate 30 minutes or longer. Butter the bottom and sides of the pan thoroughly.
For filling
Soften chocolate in top of double boiler. Let cool to 95 degrees.i approximate because I don’t have a thermometer. Add whole eggs and mix well. Add yolks and mix until thoroughly blended. Whip cream with powdered sugar until soft peaks form. Beat egg whites until stiff. Stir a little of cream and egg whites to chocolate mixture to lighten.fold in remaining cream and whites until thoroughly blended. Refrigerate at least 6 hours or preferably overnight. Whip more cream and powdered sugar and put on top. |
