1st layer:
1 C self-rising flour
½ C butter or margarine, melted
2 T sugar
¼ C pecans, finely chopped

2nd layer:
8 oz cream cheese, softened
1 C sugar
⅓-½ small carton Cool Whip

3rd layer:
1 3-oz package French vanilla instant pudding mix
1 3-oz package chocolate instant pudding mix
3 C milk

Layer 1:
Mix flour, butter, and sugar together until mealy. Add nuts and mix well. Spread evenly on bottom of greased 10 x 13 pan. Makes a thin crust. Bake st 350º or until brown. Let cool.

Layer 2:
Cream together cream cheese and sugar. Add Cool Whip, mixing well. Spread on cooled first layer.

Layer 3:
Mix together and beat well. Spread on 2nd layer. Spread remaining Cool Whip on top. Refrigerate.

This is another of Aunt May’s famous recipes, and its fans included the local high school football coach. Legend has it that Aunt May worked out a deal for eight hours of his time, enough for me to complete behind-the-wheel Driver’s Ed with said coach (at my cousins’ high school), in exchange for a yum-yum cake. Coach worked me in on his personal time, before my 16th birthday, and several months before my own high school would have scheduled me (ironically, because my high school gave priority to football players).
