2# Pecan or walnut halves
3 Egg whites
1 tbsp Water
3/4 cup Superfine sugar (or sugar processed in food processor til fine)
2 tsp Cinnamon
1 tsp Nutmeg
1 tsp Allspice
1 tsp Ginger

Directions:
Directions:
Preheat oven to 250 degrees.

Add water to egg whites and whip into stiff peaks.

Fold the nuts into the egg whites, mixing thoroughly.

Mix together sugar and spices (if processing your own sugar, include the spices while processing).

Place the egg-white-coated nuts in a large paper bag, then pour in the sugar mixture. shake vigorously for several minutes to coat nuts completely. Remove nuts from bag and spread out on cookie sheets. Keep some space between nuts, and separate any that have stuck together.

Bake for 15 minuts, then lower heat to 200 degrees and bake an additional 1 1/4 hours, stirring occasionally.

Turn oven off and allow nuts to cool completely with door slightly ajar.

Pack in freezer bags and freeze until gift-giving or serving time.

Barbara note: Double/triple the spices to taste.
