2 cups of brown sugar
1 1/2 cups of cooking oil (not a strong flavored one)
4 eggs
3 cups grated carrots
3 cups flour
2 tsp baking powder
2 tsp baking soda
2 tsp cinnamon
1 tsp salt

Mix brown sugar and oil, add eggs one at a time. Mix dry ingredients together and then grated carrots Then add wet ingredients to dry. Bake 35 minutes at 350
Options: soak raisins if using
can use pineapple and walnuts
can use licuers if you balance liquids
can add orange or lemon rinds, grated
