Cream of Zucchini Soup Recipe

1 carrot
1 large onion
1/3 cup margarine
3 to 4 medium zucchinis
4 sprigs of parsley
3 Tbsp flour
6 cups boiling water
4 Tbsp chicken soup mix
salt
pepper

Directions:
Directions:
Sautee onion in margarine. Cut zucchini and carrot into chunks and add to onions together with parsley. Cook for 1 minute. Add flour, stirring to coat the vegetables. Add water, soup mix and spices. Bring to a boil. Lower the flame ad simmer for 1/2 hour, partially covered. Allow to cool and puree.
