8 strips bacon, diced
1 lb. ground beef
1 lb. ground pork
1 Tbsp. dried parsley
2 tsp. kosher salt
4 eggs, beaten
1 c. diced onion
1 clove garlic (or 2 tsp. minced jarred garlic)
1 c. bread crumbs
2 tsp. paprika
2 tsp. black pepper

Directions:

Preheat oven to 400º. Coat a broiler pan with nonstick spray.

Cook bacon in a skillet until is starts to crisp; remove and set aside. Pour out all but 1 Tbsp. drippings from skillet. Sauté onions in bacon grease until softened. Add garlic to skillet, cook 1 minute.

Combine beef, pork, cooked bacon, onion mixture, bread crumbs, parsley, paprika, salt & pepper in a large bowl. Stir in beaten egg.

Form mixture into 1 inch meatballs and place on broiler pan. Bake meatballs until fully cooked; about 10 minutes.

(Wetting hands with water will help prevent meat from sticking.)
