42 oz low sodium chicken broth
3/4 cup water
2 cups cooked diced chicken
2 tablespoons butter
1 cup chopped onion
1 cup carrots, shredded
1 cup chopped celery
1/2 to 3/4 cup raw rice
salt/pepper to taste
1 cup half & half
1 cup milk
1 cup grated cheddar cheese or extra if desired

Directions:
Directions:
Simmer chicken in the broth until tender. shred or dice and set aside

Saute onion, celery and carrots in butter 5 to 10 minutes. Add broth with salt/pepper and rice, simmer 30 minutes

Add milk, cream, chicken and heat through. Just before serving, add cheese until melted.

**for thicker soup, use 1 cup rice**
