3 eggs, separated
1 tsp vanilla
1 cup oil
1 ½ cups white sugar
3 tbsp hot water
1 cup raw beets, grated
1 cup raw carrots, grated
½ cup nuts
2 cups flour
2 tsp baking powder
1 tsp salt

Directions:
Directions:
Beat egg yolks, vanilla, oil, sugar, and hot water. Add the remaining ingredients (except egg whites). Mix and then fold in the stiffly beaten egg whites. Bake at 350º for 45 minutes.
