1/2 Cup unsalted butter, divided
10 large carrots, peeled and cut into 1/2” slices (5 cups)
1/2 Cup Jack Daniel’s whiskey
1/4 Cup firmly packed light brown sugar
2 Tbsp fresh orange juice
1/2 Tsp kosher salt
1/2 Tsp fresh ground black pepper
Chives for garnish

1. Place a 12 inch cast-iron skillet over medium high heat one minute or until hot. Melt 1/4 cup butter in a hot skillet; add half of carrots, and sauté three minutes or just until lightly browned. Transfer carrots to a plate using a slotted spoon. Repeat with remaining carrots.

2. Remove skillet from here, step away, and add whiskey. If desired, carefully light whiskey with a long match or long multipurpose later, let flames die down. Carefully return skillet to medium high heat. Add brown sugar, orange juice, and remaining quarter cup butter; cook, stirring frequently, two minutes or until butter milk and sugar dissolves. Return carrots to skillet; stir in salt and pepper. Cover, reduce heat to medium low, and cook, stirring occasionally, 10 minutes or until tender.

3. Remove skillet from heat, and transfer carrots to a serving platter with a slotted spoon. Poor pan juicees over carrots. Serve immediately.
