For a double crust 9-inch or a single crust pie with a generous lattice use the following amounts. For a one-crust 9-inch pie, use half the recipe.

Sift together
2 cups all-purpose flour
1 teas salt
Measure and combine:
2/3 cup chilled shortening
2 T chilled butter
Cut half of shortening into the flour mixture with a pastry blender (or fork) until it has the grain of cornmeal. Cut the remaining half coarsely into the dough until it is pea size. Sprinkle the dough with:

4 T water
Blend the water lightly into the dough with a fork, add:

1 teas to 1 T water

When you can gather the dough up into a tidy ball stop handling it.

Pie Crusts are very difficult to make perfectly, I have had as many go into the trash as have gone in pie pans. Basic rules, it needs to be moist enough to roll out. I put the dough on a floured kitchen towel, that makes it a lot easier to get into the pan
