1 c. flour
⅔ c. packed brown sugar
¼ c. chopped pecans, toasted
¼ c. stick margerine, melted
½ tsp. cinnamon

4 medium (2 ½ lb.) sweet potatoes

½ c. sugar
1 ½ tsp. vanilla
1 large egg white
1 - 5 oz. can evaporated milk

Streusel mixture: Combine first five ingredients and set aside.

Wash potatoes and wrap with foil. Bake in a 350º oven about 1 hour or until tender. Cool thoroughly. Peel and mash together with white sugar, vanilla, egg white, 1 c. streusel mixture and evaporated milk. Place in a greased 2 qt. casserole and top with remaining streusel mixture. Bake at 350º for 45 minutes.

This recipe came from a Thanksgiving meal in Dallas, TX. It was prepared by Susan Arends for Steve & Sara as they celebrated with the Arends family around 1997. It has become a favorite at the Rice Thanksgiving celebration.
