Maureen's Skillet Chicken Recipe

3 Tbs veg oil
3 lbs chicken parts
1/2 cup chopped onions
1/2 cup chopped green peppers
1 minced garlic
1 16 oz can chopped tomatoes
1 14 oz can artichoke hearts
1 tsp grated red pepper
1 bay leaf

In a large skillet, heat oil over med-high heat, add chicken and brown on all sides.
Remove chicken and drain off all oil but two tbs drippings.
Add onions, green peppers and garlic, cook stirring often for three minutes till soft.
Return chicken to skillet with tomatoes artichokes, salt thyme pepper and bay leaf, bring to a boil.
Cover and simmer 20 minutes or until chicken is tender, turning occasionally.
Ciscard Bay leaf, skim excess fat.
