Sourdough Bread Recipe

1 c warm water
1/2 c sugar
1 pkg dry yeast
3 tbsp potato flakes

Feeding:
3/4 c sugar
3 tbsp potato flakes
1 c warm water

Bread:
1/4 c sugar
1/2 c corn oil
1 tbsp salt
1 c starter
1/2 c warm water
6 c bread flour

Initial starter:
Mix together all ingredients in a bowl, cover bowl with clean kitchen towel and leave on the counter. After 2 days, feed the starter and let it sit out another day. Then put it in a glass jar with holes punched in the lid and put it in the refrigerator.

Feeding the starter (every 3-5 days):
After 3-5 days, take out of refrigerator and let sit on the counter for 8-12 hours. Take out 1 cup of starter for making bread. Feed the starter and return to refrigerator. If not making bread, discard the cup of starter, but you must feed it every 3-5 days.

Bread:
Mix all ingredients in large bowl, making stiff dough. Grease another large bowl, put dough in bowl and turn to coat. Cover lightly with towel. Put in warm place to rise overnight. Punch down dough and knead. Divide into 3 parts and knead each. Put into greased loaf pans and brush with oil. Let rise all day covered with towel in warm place. Bake at 350 for 30-45 minutes until browned. Brush with butter when removed from pans. Cool on rack before storage.
