8 Chicken Thighs
¼ tsp Ground Ginger
¼ tsp Pepper
3 tbsp Cooking Oil
1 bunch fresh Broccoli (sliced thin crosswise)
1 cup chopped Scallions ( white and green)
1 cup Chicken Broth
1 tsp Salt
½ tsp Sugar
1 tbsp Cornstarch
¼ cup grated Parm Cheese

Directions:
Directions:
Remove chicken meat from bones and cut in bite size pieces.
Sprinkle with pepper and ginger. Heat oil in wok.
Add chicken and stir fry for 3 mins until golden brown.
Push to side and add scallions and broccoli. Stir fry 3 mins.
Mix together ¾ cup broth, salt and sugar. Stir into pan.
Reduce heat to medium, cover and cook 2 mins.
Add cornstarch to remaining ¼ cup broth and stir until smooth.
Stir into pan and cook for 1 min.
Remove from heat and stir in parm. cheese. Serve over rice.
