Stirfried Chicken and Broccoli Recipe

8 Chicken Thighs
tsp Ground Ginger
tsp Pepper
3 tbsp Cooking Oil
1 bunch fresh Broccoli (sliced thin crosswise)
1 cup chopped Scallions ( white and green)
1 cup Chicken Broth
1 tsp Salt
tsp Sugar
1 tbsp Cornstarch
cup grated Parm Cheese

Remove chicken meat from bones and cut in bite size pieces.
Sprinkle with pepper and ginger. Heat oil in wok.
Add chicken and stir fry for 3 mins until golden brown.
Push to side and add scallions and broccoli. Stir fry 3 mins.
Mix together cup broth, salt and sugar. Stir into pan.
Reduce heat to medium, cover and cook 2 mins.
Add cornstarch to remaining cup broth and stir until smooth.
Stir into pan and cook for 1 min.
Remove from heat and stir in parm. cheese. Serve over rice.
