2 cups cooked sweet potatoes, reserve juice
1/2 cup brown sugar
1 tbsp butter
1/2 tsp cinnamon
10 large marshmallows
1 cup shredded coconut

Directions:
Directions:
Mix sugar and cinnamon, mash sweet potatoes, add butter and sugar mixture, blend until smooth. Roll each marshmallow separately into potato mixture until well covered, forming a round ball. Then roll in coconut. Place in 300º oven long enough for marshmallows in center to become soft.


Mother's note: If potatoes seem dry, add some juice from the potatoes to desired consistency. You can also put well drained, crushed pineapple in this.


Mother never actually made the snowballs. She would prepare the potatoes according to the recipe and put them in a casserole dish and put marshmallows on top.


You could also add pecans.

This was from and old 1951 cookbook Mother had from Floyd County Rural Electric Coop. The lady's name who contributed the recipe was Nancy Morckel.
