- 4 eggs
- 2 cups sugar
- 2 cups mashed pumpkin
- 3/4 cup oil
- 3 cups flour
- 2 tsp. baking powder
- 2 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. salt
- 2 cups chocolate chips

Directions:

Mix together eggs, sugar, pumpkin and oil until smooth. Combine dry ingredients and add to pumpkin mixture, mix in chocolate chips. Lightly grease or line cupcake tins with paper liners. Bake at 350ºF for about 25 minuets or until done. Delicious with cream cheese frosting.

Frosting:
- 5 tbsp. butter softened
- 6 oz cream cheese softened
- 3 cups icing sugar
- 1 tsp. vanilla
- 1/2 tsp. almond extract

Cream butter and cream cheese in mixing bowl, gradually add icing sugar, vanilla and almond extract. Beat well. Spread over muffins.
