Amish Friendship Bread Recipe

for cinnamon sugar
c sugar
1 tsp cinnamon

3 c buttermilk
2 c oil
6 eggs
1 tsp vanilla
2 c sugar
1 T cinnamon
1 T baking powder
1 tsp baking soda
1 tsp salt
4 c flour
2 boxes instant vanilla pudding
1 c chopped walnuts (optional)

Preheat oven to 325.
Spray 2 loaf pans or 8 mini loaf pans.
Sprinkle with cinnamon sugar mixture on sides and bottom.

In large bowl, stir buttermilk, oil, eggs, and vanilla.
Stir in sugar, cinnamon, baking powder, baking soda and salt.
Slowly stir in flour and vanilla pudding.
Gently stir in nuts if using.
Pour into pans. Sprinkle tops with remaining cinnamon sugar.

Bake for 45 minutes to 1 hour.
