Preheat to 375º
2 (10 oz) pkg frozen spinach, thawed
(or fresh spinach, steamed/boiled)
5 tbsp butter
½ onion, diced
minced garlic to taste
3 tbsp flour
¼ c heavy cream
2 tbsp milk
1 tsp crushed hot red pepper
1 tsp salt
1tsp dry mustard
⅛ tsp cayenne pepper
⅛ tsp celery seed
dash Worcestershire sauce
1½ c grated sharp cheddar cheese
1 tsp paprika

Directions:
Directions:
Cook spinach. Reserve ½ c liquid. Drain.
Melt butter; saute onion & garlic. Stir in flour.
Stir in reserved liquid. Add cream & milk, stirring.
Bring to a boil, remove from heat.
Add seasonings, then stir in spinach.
Blend in cheese. Pour into 1½ qt casserole.
Bake 30 min. Sprinkle w/paprika.
