12 ounces jumbo pasta shells
2 large eggs, beaten
32 ounces ricotta cheese
2 cloves garlic, minced
3 cups mozzarella cheese
8 ounces shredded parmesan cheese
1 tsp. dried parsley
½ tsp. dried basil
½ tsp. dried oregano
1 tsp. kosher salt
½ tsp. coarse ground black pepper
4 cups sausage marinara sauce

Preheat oven to 350º and bring a pot of water to a boil. Add the shells and cook for 1 minute shy of the directions on the box. To a large bowl, add the eggs, ricotta, garlic, 2 cups mozzarella and half the parmesan cheese, parsley, basil, oregano, salt, and pepper. Mix the ingredients well. Spoon the mixture into the shells and put them in a 9x13 inch baking dish. Top with sausage marinara sauce and the rest of the cheese. Cover and bake for 20 minutes, uncover and bake for about 10 more minutes. This recipe can easily be doubled and layered like a lasagna to feed a crowd.
 

Sausage Marinara

1 pound hot italian sausage
1 pound sweet italian sausage
1 minced onion
1 finely chopped green pepper
1 finely chopped red pepper
s cloves garlic, crushed
6 ounce can tomato paste
28 ounce can crushed tomatoes
8 ounce can tomato sauce
2 cans diced italian tomatoes
½ cup water
2 Tbsp. sugar
1½ tsp. dried basil
1 tsp. oregano
½ tsp. fennel seeds
1 tsp Italian seasoning
¼ tsp. ground black pepper
½ Tbsp. salt
dash red pepper flakes

Brown sausage and set aside. In same pot add a little olive oil and sautée onion and pepper, when soft add garlic and cook a couple more minutes. Add the tomato paste and let it "bloom" stirring constantly. Add in remaining ingredients and cooked sausage. Simmer at least 30 minutes up to 2 hours. Add a little water if necessary.
