1/4 c each brown sugar and ketchup
3 tbsp balsamic vinegar
2 tbsp olive oil
1 tbsp reduced sodium soy sauce
2 tsp minced garlic
1 tsp each curry powder, ground coriander and ground ginger
1/2 tsp each salt and pepper
1 boneless pork loin roast (4 lbs)

Whisk together all marinade ingredients in a medium bowl. Place pork in a large heavy duty, resealable plastic bag. Add marinade and seal bag. Turn bag several times to coat roast with marinade. Marinate in fridge overnight.
Preheat oven to 325. Remove pork from bag and place on a rack set in a shallow roasting pan. Reserve marinade. Roast pork, uncovered for about 1 hour and 45 minutes to 2 hours. A meat thermometer inserted in centre of roast should read 155F.
While roast is cooking, pour reserved marinade into a small saucepan. Bring to a boil, then reduce heat to low and simmer for 1 minute. Brush roast generously with marinade during last 20 minutes of cooking time.
Remove roast from oven. Cover loosely with foil and let rest 10 minutes before slicing.
