12 Tbsp. mayonnaise
Juice of 2 lemons
2 small onions, finely minced, or 4 Tbsp. minced chives
4 cups frozen peas (do not thaw)
2 cups cheddar cheese, coarsely shredded
Salt and pepper to taste
4 cups lettuce, torn into bite size pieces
16 slices crisp crumbled bacon

Directions:
Directions:
24 hours before serving: combine the mayonnaise, lemon juice, onion, frozen peas, and cheese in a bowl. Stir well, add salt and pepper to taste, cover and refrigerate.

Before serving: add lettuce and bacon, toss well, and taste again.

Makes 8-10 servings.
