12 bottled herring fillets
Hot prepared mustard
3 small dill pickles, cut
1 large onion, sliced into thin rings, then lengthwise into eighths
2 Tbsp. drained small capers

Directions:
Directions:
Drain herring fillets and pat dry. Lightly spread each one with the hot mustard. Place a pickle spear and an onion ring at one end of each fillet. Roll up and scatter remaining onion rings and capers over, if desired. Arrange seamside down on serving plate. Use toothpicks to hold.

Note: Cut fillets in half if they are too long for two-bite portions.

Makes 6 servings.
