3/4 cup yellow cornmeal
1 cup cold water
1-1/2 tsp salt
3 cups boiling water or part broth
1-1/2 cups chopped onions
3 tbsp butter
1 lb ground beef or 1 chicken
1 clove garlic
1/2 cup chopped green pepper
1 - 8 oz can tomato sauce
1 to 3 tbsp chili powder
1 - 12 oz can whole kernel corn, drained (optional)

Directions:

Mix together cornmeal, cold water, and salt. Stir into boiling water in top of a double boiler. Cook about 10 minutes over direct heat; continue to cook over hot water. Cook half of onions in butter until limp; stir into mush. Fry hamburger, or if using boiled chicken, cut into small pieces.
Drain off any fat from hamburger. Add garlic and remaining onions. Cook until limp. Add green pepper, chili powder to taste, tomato sauce and corn. Simmer 20 minutes. Line shallow casserole with mush, spoon in meat mixture, cover with rest of mush.

Bake at 350º for 25 minutes. Use at least a 9" x 9" dish. Recipe can be doubled for larger lasagne dish.
