1-1/2 cup elbow macaroni (uncooked)
3 T butter
3 T flour
1/4 c. onion minced (or 1/2 tsp onion powder)
1-1/2 c. milk
1 tsp salt
dash of pepper
3 c. (12 oz. sharp cheddar cheese, shredded
1/4 tsp paprika
tomato slices

Directions:
Directions:
Cook pasta according to package directions, drain. In saucepan on medium heat melt butter.Add onion and cook until soft (if using onion powder, add with salt and pepper). Blend in flour, Stir until makes paste. Cook, stirring 1-2 minutes. Slowly stir in milk. Cook on med/low heat til thickens. Add salt, pepper and 2/3 cheese. Remove from heat. (it is really yummy to taste the sauce at this point J) Mix sauce and pasta. Tope with remaining cheese, sprinkle paprika, arrange sliced tomatoes on top... be careful, your neighbor might mistake you for a gourmet cook and spread the word aboard!. Bake 30 minutes at 350.

Can substitute gluten free pasta - flour alternative to make this GF friendly. Kids will still love it and it is quite tasty.
