½ cup yellow cornmeal
⅓ cup sugar
2 tsp baking powder
½ tsp baking soda
1 tsp kosher salt
1 large egg, lightly beaten
8 tbsp unsalted butter, melted
¾ cup buttermilk
8 oz nectarines (from 1 large or 2 small), pitted and cut into ½-inch dice

Preheat oven to 350ºF. Line a 12-well, standard-size muffin pan with paper liners. Whisk together the flour, cornmeal, sugar, baking powder, baking soda, and salt in a mixing bowl until well incorporated. Combine the egg, melted butter, and buttermilk in a large bowl and whisk well to combine. Add the flour mixture to the egg mixture and stir until just combined, then stir in the nectarines. Distribute the batter evenly among the prepared muffin cups, filling them all the way to the top. Bake for 30 minutes, until the muffins are golden brown and a toothpick inserted into the center of each one comes out clean. Cool to room temperature before eating.
