1 Egg
½ C. Oil
½ C. Sugar
½ C. Brown Sugar
1 C. Flour
½ tsp Baking Soda
¼ tsp Salt
¼ tsp Cinnamon
¼ tsp Nutmeg
1¼ C. Rolled Oats
1 C. Grated Zucchini

I always added more flour and used less sugar!

Directions:
Directions:
Beat egg, oil and sugars together until well blended.
Combine flour, soda, salt, cinnamon and nutmeg, add egg mixture.
Add oatmeal and zucchini, mix well.
Drop by tablespoonfuls on greased cookie sheets, one inch apart.
Bake in preheated 350º oven for 12 minutes, until edges are lightly browned.
