1½ cups sugar
3 TBSP cornstarch
3 TBSP flour
dash salt
1½ cups hot water
3 slightly beaten egg yolks
2 TBSP butter
½ tsp grated lemon peel
⅓ cup lemon juice
1 9" pie crust (baked)

3 eggs whites
1 tsp. lemon juice
6 TBSP sugar

Directions:
Directions:
In saucepan, mix first four ingredients; gradually stir in hot water. Bring to boil, stir constantly. Reduce heat, cook and stir 8 minutes. Stir small amount of hot mixture into egg yolks. Then return to hot mixture; bring to boil and cook 4 minutes, stirring constantly. Add butter and lemon peel. Slowly stir in 1/3 cup lemon juice. Pour into pie shell. Cool to room temperature.

Meringue: Beat egg whites with tsp lemon juice to soft peaks. Gradually add 6 TBSP sugar, beat to stiff peaks. Bake at 350º for 12-15 minutes.
