!.2 cup onion, chopped coarsely
1/2 cup celery, chopped coarsely
3/4 cup carrot, chopped coarsely
2 cloves garlic, chopped
1 tbs. butter
1 can chicken broth
1 can chopped tomatoes
1 can tomato sauce
1 can cannelloni beans
handful baby spinach
1/2 cup penne pasta
1 teaspoon dried thyme
1 teaspoon dried oregano
salt to taste

Directions:
Directions:
Saute coarse chopped vegetables in butter until glossy. Add the garlic for a minute or so, being careful not to burn. Add the canned goods and the spinach. Simmer for about an hour. Add the spices and the pasta. Simmer another 30 minutes until the pasta is cooked. Salt to taste.

Serve with shaved Parmesan cheese

This soup reheats well. Add more chicken broth if too thick and adjust spices if you want more intense flavor.
