4 Egg yolks
1 ⅓ cup granulated sugar
1 ½ cup brown sugar
2 cups dutch processed cocoa powder
6 cups milk
5 ½ cups whipping cream
2 Tbsp. vanilla

Directions:
Directions:
Whisk yolks.
In a separate bowl, whisk sugars and cocoa powder well until no lumps remain.
Heat milk and sugars on stovetop. Remove before boiling and gently temper with egg yolks.
Add milk and beat for 1-2 minutes until smooth.
Mix in cream and vanilla.
For better freezing, chill in refrigerator until cold.
Freeze in ice cream freezer.

The egg yolks take this ice cream to the next level! It's chocolatey and rich, but with the yolks it's thick and custardy. My friend Cara taught me to make ice cream using yolks and it is so much better!
