Mandarin Orange Salad Recipe

1/2 cup almonds
1 heaping tablespoon sugar
1/2 head of bite size lettuce
2 stalks of celery
11 oz can of drained mandarin oranges

1/4 cup olive oil
2 tab sugar
2 tab vinegar
1 tab parsley
1/4 tsp salt
dash pepper

Cook almonds and sugar over LOW heat stirring continuously until sugar melted and almonds are coated.
Place almonds on wax paper to cool. Break apart when cooled.
Mix dressing ingredients together, shake and cool in fridge.
Mix salad ingredients in a bowl.
Add dressing and almonds IMMEDIATLEY before serving, not early.
