2 ½ cups cake flour
1 tsp. baking powder
½ tsp. baking soda
1 tsp. salt
¾ cup buttermilk
3 Tbsp. lime zest &
¼ cup fresh lemon juice from 3-5 lemons
1 ½ tsp. vanilla extract
2 cups granulated sugar, divided
12 Tbsp. butter, softened
3 large eggs plus 1 egg yolk

GLAZE:
3 cups powdered sugar
¼ cup lemon juice
2 Tbsp. buttermilk
½ tsp. vanilla

Directions:
Directions:
Preheat oven to 350º.
Combine flour, baking powder, baking soda, and salt in medium bowl.
Combine buttermilk, lemon juice, and vanilla in liquid measuring bowl.
Beat all 2 cups granulated sugar and zest until moist and fragrant.
Remove ½ and place in a separate bowl to use later.
Add butter to sugar mixture and beat until light and fluffy--about 2 minutes.
Beat in eggs and yolk, one at a time, until incorporated.
Reduce speed to low and add flour and buttermilk mixtures in 3 additions, alternating between the two. Beat until smooth after each addition.
Scrape batter into greased sheet pan (13 x 18) and bake for about 25 minutes.
Let cool 10 minutes.
Whisk all glaze ingredients together until smooth.
Gently spread glaze over warm cake and sprinkle evenly with reserved sugar.
Cool completely--at least 2 hours. Better if served chilled.

I found this recipe in a magazine and fell in love with it. I often make it with all limes instead of lemons and it is always delicious!
