1 1/2 lb Pork Tenderloin
1 tsp sea salt
1/2 tsp pepper
1 tsp Italian seasoning
1 tsp garlic powder
1 tsp ground coriander
2 Tbsp olive oil

Directions:
Directions:
Preheat oven to 400 º with rack in the middle.
Trim Tenderloin of fat and pat dry with paper towel.
Pierce pork loin all over with a fork and rub with 2 Tbsp oil.

Combine seasonings and sprinkle onto the tenderloin then use
hands to rub the spices into the Tenderloin.

Heat 1 Tbsp oil over med-hi heat in a oven safe pan. Once oil
is hot, add pork and brown on all sides. 6 min total.
Place in oven and bake uncovered at 400º for 15 min, flipping
the pork over halfway thru baking. Bake till center is 150º then
transfer to cutting board and let rest 5 - 10 min.
Center may have a very slight pink.
Slice and serve.
