1/2 cup coconut oil .
1 and 1/2 cups of Quaker Dry Oatmeal
1/2 cup chopped pecans (walnuts or almonds are great too)
1/2 cup of creamy or crunchy Natural Jif peanut butter
A dash of cinnamon
1 bag of chocolate chips (I use Enjoy Life Dairy Free brand)

Directions:
Directions:
Heat 1/2 cup of coconut oil in a larger boiler on the stove.
Add 1 and 1/2 cups of Quaker Dry Oatmeal and stir in.
Add 1/2 cup chopped pecans (walnuts and almonds are great too) and simmer for about 3-5 minutes on low heat stirring occasionally.
Stir in about 1/2 cup of creamy or crunchy Natural Jif peanut butter.
Sprinkle a small amount of cinnamon on top and stir well.
Finally pour in a small bag of chocolate chips - I use Enjoy Life Dairy Free brand.
Allow Chocolate chips to melt well and stir one more time. Then pour into a 9 inch glass pie plate and cover. Put in refrigerator for at least 2-3 hours for them to set up.
Then cut into bars and serve. Enjoy for breakfast or snack time.

I originally got the basic recipe from Pastor Gretchen DeVries, and I modified it some by adding the chocolate. I enjoy eating healthy and sharing tasty treats with those I love. I hope these add Joy to your day when you eat them.
