2 1/3 c flour
1 c butter
3/4 c sugar
1 large egg yolk
1/2 tsp vanilla extract
1 c coarsely chopped almonds
6 oz bittersweet chocolate
1 c flaked almonds, toasted

Directions:
Directions:
Beat butter and sugar with electric mixer. Add egg yolk and vanilla. Mix in flour and chopped almonds to form a stiff dough. Form the dough into two logs 2 inches in diameter. Wrap in plastic wrap and refrigerate for at least 30 minutes. Preheat oven to 350º. Line two cookie sheets with parchment paper. Slice dough 1/2 inch thick and place 2 inches apart on cookie sheet. Bake 15-18 minutes until lightly browned. Cool. Melt chocolate in a double boiler. Dip cookies halfway into chocolate, then into flaked almonds. Cool until set.
