1/4 c. fresh lemon juice
1/2 t. hot pepper flakes
1/2 t. cracked black pepper
1/2 t. coarse salt
4 strips lemon zest (use a peeler to shave the zest off the lemon)
3 cloves garlic, crushed or minced
1/4 c. coarsely chopped fresh Italian parsley
1/4 c. coarsely chopped fresh basil, cilantro, dill, oregano or a mix of all 4
1/2 c. extra virgin olive oil

Directions:
Directions:
Combine the lemon juice, hot pepper flakes, cracked pepper and salt in a nonreactive bowl and whisk until salt crystals are dissolved. Add lemon zest, garlic, and herbs. Whisk in the olive oil. The virtue of this marinade is its freshness; use with in 1 to 2 hours of making. Stir again before using.
