1 Cup water
½ cup butter
¼ tsp. salt
1 cup sifted flour
4 large eggs

Directions:
Directions:
In saucepan heat water, butter, and salt to full boil. Reduce heat and quickly stir in flour, mixing vigorously with a wooden spoon till mix leaves sides of pan in a ball. Remove from heat and beat in eggs, one at a time, beating after each addition, until mix is smooth (low speed). Drop dough from metal mixing spoon onto a greased baking sheet 3" apart.
Bake in a preheated 400º oven for 10 minutes, lower to 350º and bake for 25 minutes.
Puffs are ready when they double in size, are golden brown, and firm to the touch. Remove puffs from oven and cut side of each one with a knife. Put back in oven, turned off. Keep door ajar and let stand for 10 minutes. Cool puffs on racks.

Slit top and fill
These are very versatile and work as a great appetizer filled with chicken, ham, or tuna salad. Go sweet stuffed with pudding and or whip cream and or fresh fruit, with drizzle of chocolate, honey or powdered sugar on top. The options are endless!
