2 C flour
1/2 tsp salt
1/2 C butter, softened
1/2 C sugar
1 tsp vanilla
1 tsp almond extract
confectioners' sugar

Directions:
Directions:
Sift together flour and salt, add pecans. Cream butter and sugar until light and fluffy, then beat in vanilla and almond extracts. Slowly fold in four-pecan mixture, 1/2 C at a time, until blended. Chill dough for 102 hours. Preheat oven to 325º. Shape dough into 1" balls, handling quickly and lightly. Arrange 2" apart on ungreased baking sheets and bake for 15 minutes, or until the color of pale sand. Cool cookies on a wire rack. When almost cool, roll in confectioners' sugar (not when hot or sugar will get gummy). Sore in airtight containers.
