2 lbs Carrots
1⅓ cups White Vinegar
1⅓ cups Water
½ tsp Celery Seed
½ tsp Mustard Seed
1½ tsp Dill Seed
½ tsp Coarse Salt
1 cup White Sugar

Directions:
Directions:
Wash and scrape carrots. Cut into strips. Cook in boiling salted water
for 10 mins or almost tender. Do not overcook. Drain and pack carrots into
hot sterilized jars. Combine remaining ingredients into a saucepan.
Bring to a boil. Boil 2 mins. Pour syrup over carrots to overflowing and seal.
