3 Eggs
1 cup packed Brown Sugar
2 cups packed, finely shredded, unpeeled Zucchini
¾ cup Sour Cream
½ cup chopped Walnuts or Pecans
½ cup Vegetable Oil
1 tsp grated Orange Zest
1 tsp Vanilla
2 cups all purpose Flour
⅓ cup unsweetened Cocoa
1½ tsp Baking Powder
1 tsp Baking Soda
1 tsp Salt
1 tsp Cinnamon

Chocolate Glaze (optional):
2 tbsp Butter
2 oz unsweetened Chocolate
1¼ cup Icing Sugar
1 tsp Vanilla

Directions:
Directions:
In a large bowl beat eggs and sugar. Add zucchini, sour cream, nuts, oil, orange rind
and vanilla. Mix well. Mix or sift together flour, cocoa, baking powder, soda, salt and
cinnamon. Blend in zucchini batter.
Pour batter into a greased and lightly floured 13 X 9 inch cake pan.
Bake at 350º F for 35 mins or until toothpick comes out clean.
When cake cools dust with icing sugar or frost with chocolate glaze.
To make chocolate glaze. In a saucepan, over low heat, melt the butter and chocolate.
Whisk in sugar, egg and vanilla until smooth.
