6 cups fresh blackberries
1 cup granulated sugar, plus 1 Tbsp.
1-2 Tbsp. lemon juice
Zest from one large lemon
¼ Ultra Gel (If desired to thicken)
2 cups flour
½ tsp. salt
1 Tbsp. baking powder
¼ cup vegetable shortening
4 Tbsp. butter
1 egg
½ cup milk
¼ cup coarse sugar

Directions:
Preheat oven to 375º.
Combine blackberries, sugar, (Ultra Gel, if desired) lemon juice, and lemon zest and spread out in a 9 x 13 pan.
In a separate bowl pour flour, salt, baking powder, and 1 Tbsp. sugar (and ultra gel if desired).
Cut in shortening and butter with pastry blender until mixture is crumbly.
In a separate small bowl, mix egg and milk.
Pour milk/egg into flour mixture, stirring as you go.
Mixture should be smooth and dry, but not overly sticky.
Take clumps of dough and place them on top of the blackberries. Lightly flatten the dough with your fingertips.
Sprinkle with coarse sugar and bake for 30 minutes or until golden.
Serve with vanilla ice cream.

One of my cousins requested this for his birthday, and I had never made it because I didn't know I liked it until I tried this recipe! I got it from my friends the Morgans, who make it camping. I love the fresh lemon flavor with the blackberries. I like to add Ultra Gel so that the berry mixture isn't quite so thin, but it's delicious either way.
